Cabbage is inexpensive. I’m 1/2 Russian. This is good recipe for College Boy #1 who is 1/4 Russian and should learn some of these things. Normally, dish would be boiled or braised but you will find this easier and a lot quicker.

This would be better if you made your own alfredo sauce from scratch, but I’m assuming you won’t be doing that. So throw this together in the time it takes the pasta to cook. About 13 minutes.

Oat Bran Muffins

In University Recipies on August 31, 2013 at 2:14 pm

These are a good for breakfast with a big glass of organic milk.  You will need an oven, a 12 muffin tin, mixing bowl, whisk or big spoon,  measuring cup and spoons, and a timer.  If you go to Starbucks for your morning muffins, you will spend all of your money and will not be able to go to the movies.  And don’t phone home for money if you run out.  We will be giving you enough to survive each month.  Survival is not the same as living at home and going out to eat whenever you and daddy are in the mood.  Enjoy.

  • ½ cup brown sugar, packed
  • 1-1/2 cups oat bran
  • 1-1/2 cups unbleached white flour
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • ½ tsp salt
  • 2 eggs
  • 1 cup applesauce, chilled
  • 4 tbsp. vegetable oil
  • 1/2 cup raisins (optional)

Preheat oven to 400F. Line 12 muffin cups with paper liners. Blend together dry ingredients. Whisk wet ingredients together then dump them in with the dry ingredients. Mix. Add about a ½ cup of raisins and mix. Spoon batter into muffin cups. Let stand 10 minutes. Bake 15 minutes or 10 minutes if using a convection oven. In any case, check them after 10 minutes. Yield 12 muffins.
